Castlewood sparkling wines undergo traditional method secondary fermentation for a minimum of eighteen months before release.The farm is ran by the Corbett family in Devon and headed up by Rob. From producing the grapes, to make, to bottle, everythng is done on site. There is no filtration or fining chemicals, as the wines are left to clarify naturally. They don’t use pumps when bottling but use gravity instead.
