The Clark family discovered that Red Leicester cheese had been made on the farm from 1745 until 1875 and decided to resurrect this lost recipe in 2005 after a reminiscent trip to the pub where David remembered collecting cheese from the farm and sitting on the 20kg wheels in the back of the butcher’s van.
