Aged for approximately 6 months, Boyne Valley Bán is a white goat's cheese similar in style to the French Tomme cheeses. The goats graze on the specific grasses and herbs of the Boyne Valley. This unique diet directly influences the flavour profile of the milk, giving the cheese its characteristic grassy, slightly sweet, and subtly complex notes – rich, earthy flavor with nutty and mushroom undertones. Boyne Valley has a creamy and crumbly texture becoming more crumbly and powerful with age.
