Aged for 16–22 months. Made to a Dutch Gouda recipe using high-quality Ayrshire milk from Lynher Dairies’ own cows, with Alpine starter cultures. During maturation, each wheel develops beneath a breathable, hand-painted black wax coating, resulting in a firm, dense texture and a long, complex flavour. Expect sweet cream and white wine aromas, with notes of toasted almonds, caramel and gentle nuttiness, balanced by a deep savoury finish.
