Work with us.
We hire for curiosity and care, not cheese knowledge — that part we teach. Have a look at what's open, then tell us about yourself.
Working at Mellis
Mellis Cheese has been cutting and selling farmhouse cheese since Iain Mellis opened on Victoria Street in 1993. Three decades on we're still family-run, still buying from small producers we know by name, and still cutting every piece to order rather than pre-packing it.
Our people are the reason customers come back — someone behind the counter who can put the right thing in their hands and tell them why. If that sounds like work you'd enjoy, we'd like to hear from you.
-
You'll learn the cheese properly
Nobody arrives knowing it all. You'll taste across the counter every week, learn where each cheese comes from and how it's made, and learn to talk about it with confidence.
-
Small team, real responsibility
Six shops and a maturing room — not a chain. You'll know the directors, the office team, the cellar team and the people who make what we sell.
-
Looked after
Fair hours set in advance and a massive staff discount across the range (because to learn you need to taste). We'd rather keep good people than keep hiring.

Counter cheesemonger — Stockbridge
The role
You'll be one of three full-time counter staff at Stockbridge, the original Mellis shop. The role is hands-on every day: cutting cheese to order, talking to customers, restocking from the cellar.
We open the doors at 9am and close at 7pm Monday to Saturday, 11am to 5pm on Sunday. Shifts rotate.
What you'll do
- Cut and wrap cheese to order — every wedge by hand, no pre-pack, no shrink wrap.
- Recommend, taste, and explain. Most customers walk in not knowing what they want and walk out with three pieces.
- Receive deliveries from suppliers and from the cellar.
- Keep the shop, the board, and the counter clean and well-stocked.
Who you are
- Curious about food, with strong opinions about it.
- Comfortable across a busy counter — the shop is small and gets full on a Saturday.
- Able to lift up to 12kg wheels.
- Right to work in the UK (we can support a work visa for senior roles only).
What we offer
- Industry-leading staff discount across the shop.
- A free monthly cheese box from the Cheese Club.
- Generous holiday — 30 days including bank holidays.
- Real progression — the cellar lead, the buyer, and the Glasgow manager all started at the counter.
-
Cellar assistant
The role
Our maturing rooms in Leith are where most of the cheese is ripened before it goes to the shops or out for delivery. The cellar assistant role works alongside our cellar lead and shares the rhythms of the room.
What you'll do
- Turn and wash rinds on a daily / weekly schedule.
- Receive deliveries from producers, log and shelve.
- Pull stock for shop deliveries and online cut-to-order.
- Help maintain temperature, humidity and cleanliness across the room.
Who you are
- Comfortable in a cool, damp environment for full days.
- Detail-oriented — small changes in temperature and humidity matter.
- Curious about the science of ripening. We'll teach the rest.
What we offer
- Industry-leading staff discount.
- 30 days holiday including bank holidays.
- Hands-on training from our cellar lead.
- Producer trip once a year — past trips have been to Ireland, Lyon, and Somerset.
-
Weekend counter — London
The role
Saturdays 10am–6pm and Sundays — we're closed Sunday in London, so a Saturday-only role is also possible.
What you'll do
- Cut and wrap cheese to order.
- Recommend, taste, and explain to walk-in customers.
- Restock the counter and replenish from the back.
Who you are
- Available every Saturday during shop hours.
- Comfortable on your feet for the whole shift.
- Right to work in the UK.
What we offer
- Staff discount.
- Free monthly cheese — the same Cheese Club box other staff get.
- A foot in the door if you want to grow into a full-time role.
