Traditional Smoked Spainsh Paprika from Extremadura, Spain. Pimentón de La Vera is a smoky “paprika” from La Vera in Extremadura, Spain – Dulce is sweet and smoky. Dried traditionally over indirect-heat oak fires for 10 to 15 days, and finished over a slightly warmer fire for three more days. This process takes the ripe peppers to a low percentage of moisture, preserving flavour and colour and imbuing them with the classic DOP smokiness.
