Aged for two months and made with unpasteurised cow’s milk by Jane Stewart in Anstruther. Traditionally smoked over oak chips at the local Smokery in St Monans. The flavour is mild, with gentle oak smoke. The flavours are mild, yet complex with flavours of lemon and a hint of mushroom combined with gentle smoke.
