Aged for 6 months and made with unpasteurised cow’s milk by Jonny of Mrs Kirkhams Lancashire, England. Smoked for four days over hickory while it is still very young, the cheese develops along with the smoke giving it a deeper flavour. The fresh, tart flavours you’d expect from Lancashire with savoury, smokiness added.
